Easy Millionaire Shortbread Recipe

1. America's Test Kitchen Millionaire Shortbread Recipe

Ingredients:

  • 2 ½ cups of all-purpose flour
  • ½ cup of sugar
  • 16 tbsp of unsalted butter, melted
  • ¾ tsp of salt
  • 1 can of sweetened condensed milk
  • 1 cup of brown sugar
  • ½ cup of heavy cream
  • ½ cup of corn syrup
  • ½ tsp of salt
  • 8 tbsp of unsalted butter
  • 8 oz of bittersweet chocolate, 2oz grated and 6oz chopped

Instructions:

Step 1. In a large bowl, combine the 2 ½ cups of flour, sugar, and ¾ teaspoon of salt. Whisk the dry mixture and then pour the melted butter.

Step 2. Stir the mixture until everything is well-combined.

Step 3. Prepare a deep baking tray and line with a sheet of aluminum foil. Transfer the mixture to the baking tray and spread evenly. Press the mixture until compact.

Step 4. Poke the mixture with a fork and give 1-inch space from each mark.

Step 5. Bake the mixture in the oven at 350 °F or 177 °C temperature for about 25 to 30 minutes or until the top is slightly golden.

Step 6. Take out from the oven and press the surface of the bread with a burger flipper. You can also use other tools that have a wide and flat surface to compact the bread. Let sit to cool for 20 minutes.

Step 7. Meanwhile, make the caramel topping by combining 1 can of sweetened condensed milk, brown sugar, corn syrup, unsalted butter, salt, and heavy cream in a saucepan.

Step 8. Heat the mixture over medium heat and stir. Cook for 16 to 20 minutes or until the temperature of the mixture reaches between 236 and 239 °F or 113 and 115 °C.

Step 9. Remove the mixture from the heat and immediately pour it on top of the bread. Spread evenly with a spatula. Let sit for about 90 minutes until completely set.

Step 10. Next, make the chocolate sauce by heating the 6oz of chopped chocolate in a microwave for about 1 to 2 minutes. Stir the chocolate until everything is melted.

Step 11. Immediately add the grated chocolate to the melted chocolate and stir. Take the chocolate back to the microwave for a few seconds until everything is melted.

Step 12. Pour the melted chocolate on top of the caramel topping and spread evenly with a spatula. Put the bread in the fridge for about 10 minutes or until the chocolate is set.

Step 13. Take out from the fridge and take the bread out from the baking tray. Cut the bread into smaller rectangles with a serrated knife.

Step 14. Put on a plate and serve. Enjoy!

Ingredients:

For the shortbread

  • 12 tbsp of cold unsalted butter
  • 2 cups of all-purpose flour
  • ¼ cups of sugar

For the caramel

  • 1 and ½ cups of light brown sugar
  • 6 tbsp of Guinness
  • 1 cup +1 tbsp of unsalted butter
  • 1 ¼ cup of crème Fraiche

For the chocolate

  • 10oz of 70 percent dark chocolate
  • 2 tbsp of unsalted butter

Instructions:

Step 1. Preheat the oven to 350 °F or 177 °C.

Step 2. Prepare a 12 x 8-inch baking tray and grease the inside with butter.

Step 3. In a mixing bowl, combine the flour, sugar, and unsalted butter. Mix by hand until the mixture forms fine crumbs.

Step 4. Add a little water to create a dough and place the dough in the baking tray. Spread evenly and push the dough to make it compact. Poke the dough with a fork on all the surfaces.

Step 5. Bake the dough in the oven for about 20 minutes or until slightly golden. Take out from the oven and let sit to cool.

Step 6. Make the caramel by mixing the brown sugar, butter, Guinness, and water in a saucepan. Heat the pan over medium-high heat and bring the mixture to a boil while stirring occasionally.

Step 7. Add the crème Fraiche, whisk, and turn down the heat to low. Let the caramel mixture bubble for about 20 minutes while whisking the mixture often.

Step 8. Immediately put the caramel sauce on top of the bread and spread evenly with a spatula. Let sit to cool and chill in the fridge for about 2 hours.

Step 9. Make the chocolate sauce by setting up a double boiler. Using a heatproof bowl, combine the chocolate and butter. Stir occasionally until everything is melted and well-combined.

  • 250g of shortbread biscuits, crushed
  • 397g of Carnation Condensed Milk
  • 55g of butter, melted
  • 150g of dark brown sugar
  • 150g of butter
  • 200g of dark chocolate
  • 55g of white chocolate

Instructions:

Step 1. Put the shortbread biscuits in a zip lock bag and crush with a baking pin until they form small grains.

Step 2. Transfer the crushed biscuits to a large bowl and add the melted butter. Stir until well-combined.

Step 3. Transfer the biscuits crumble to a baking tray, spread evenly, and pressed with a spoon to make it compact. Chill the biscuits crumbles in the fridge for about 10 minutes.

Step 4. Meanwhile, heat the sugar in a saucepan over medium heat. Stir until the sugar is melted then add the condensed milk and bring it to a boil while stirring continuously.

Step 5. When the caramel is thickened, immediately pour on top of the crushed biscuits and let cool. After that, chill in the fridge until set.

Step 6. Take out from the fridge and cut the bread into squares. Transfer to a plate and enjoy!
